Der Bohnapfel ist ein alter Kulturapfel ganz in der Nähe unserer Brennerei auf der Klingenburg geerntet. Er kommt mit leichten Apfelnoten an der Nase, im Geschmack ist er würzig und fein. Die Lagerung im Eichenfass bringt dem Brand schöne Holznoten mit einem Hauch von Vanille.

Williams Pear 2017

The distillation of the red Williams is aged in French oak casks until the pear s persuasive aroma has been nobly wedded to that of the hearty wood. Its intensive bouquet and effeminately complex structure yields a discreet elegance and impressive finish. The initial tender sweetness of its nose stands in stark contrast to its clean final notes.

Black Currant 2015

The blackcurrant is regarded as the queen of the berry spirits. This otherwise seemingly humble little black berry makes a rather bold entrance – and its queenly fanfare remains long after it has left the stage. Its fragrance is deceptively sweet to the nose, a clever guise of this tart Northern Europe native whose juice is known as a throat soother. And though the doctor may not prescribe spirits as an immune booster, it’s nonetheless nice to know that our berries come from certified organic cultivation. (A tiny swig won’t hurt.)

Damson Plum 2016

The locally grown late-blooming “house zwetschgen plums” (sometimes called “farmer’s plums”) are harvested as late as possible so that its aroma sings not just a song but rather an aria during its otherwise quiet phase of fermentation. Later it acquires a brawny color and a tiny whiff of vanilla after finding refuge in French oak barrels. Its racy force is not always so immediately apparent: it exerts its influence long after it has left your tongue. Amongst ourselves, we call it our Patience Plums brandy.

Wild Plum 2015

Painstakingly procured and produced in a particularly limited edition, its wild fruit is an extremely rare find. Zibertle are no bigger than a gumball and they have proportionately large seeds, making their fruity flesh all the more precious. Because of their low sugar content, the mouth puckers when devouring these unusually succulent little fruits. Hand-picked locally, these redish-violet organic spheres embody the rambunctious spirit of upper Swabia and the Black Forrest.

Mirabell Plum 2016

These incredibly ripe Mirabelle plums from the Neckar Valley met with the heat of the fire twice and only with the greatest of care. The fine flavor of this highly aromatic fruit opens up on the palate with slight endnotes of bitter almond and marzipan, and its elegant fragrance gives the brandy what one could describe as none other than a finale with punch. The Neckar, after all, received its name from the Celts who called it the “wild river.”

Cox Orange 2011

The firm but nevertheless prime pulp of the Cox Orange apple has a pronounced bite unlike none other. In its raw form, the Cox is the one in which you can hear the seeds rattling. These small to medium-sized
handpicked fruits are distilled twice after a six-week process of natural fermentation, its rattle long removed. In the end, its incomparably sweet and spicy character finds a perfect match when wed to the even-tempered humor of the French Limousine-Oak cask.

Apricot 2009

It’s the time served in oak barrels that has given this little apricot a story to tell. His diary from the summer of 2008 involves a day’s sojourn to Northern Italy which ends in a criminal court process that ensued from a large truck hitting a roadside stone. Years later, like a bearded pipe smoker in his old holey Chippendale armchair by the fireplace, pleasantly not old-fashioned: you only wish he’d stay up a little later.

Though all of our spirits stimulate the fantasy, the apricot seems to do a particular number on the nose. Its finish is smooth and elegant, as soft as the skin of its fruit. There s a flowery edge to the experience, tender yet crisp. It s hard to resist touching apricots, right?
